Easy Barbecue Chicken Pizza


Chelsey listed her delicious pizza recipe on here which looked so good. Plus, Dal has been talking about pizza all week, so I just had to make a pizza. We were a little low on ingredients but had just the right stuff to make some barbecue chicken pizza. Dallan loved it so much he said he could eat it everyday. I'm not so sure about that, but we thought it was pretty good :) This recipe is created from a compilation of different barbecue chicken recipes. It doesn't always list amounts-so just add how much you like of that ingredient!

Ingredients:

1 pizza crust
2-3 boneless, skinless chicken breasts
olive oil
salt and pepper
barbecue sauce
shredded mozzarella cheese
1/4 onion, preferably red onion, thinly sliced
1/4 cup fresh cilantro

To prepare your chicken, preheat oven to 350. Drizzle with olive oil and season with salt and pepper. Bake covered or wrapped in aluminum foil. Bake 35-40 minutes or until juices run clear. When cooked and cooled, shred or dice chicken. Add barbecue sauce to taste.

Top prepared dough with barbecue sauce, half of the mozzarella cheese, onions and chicken. Sprinkle with the remaining cheese. Bake in 450 degree oven until crust is lightly browned and cheese is bubbly. Sprinkle with cilantro.
