Peanut Brittle

Adapted from my SIL Amie's Recipe

I'm not a fan of store bought peanut brittle at all, but I love this recipe.

Ingredients:

2 cups sugar
1 cup corn syrup
1/2 cup water
1 cup butter
1 teaspoon baking soda
Dry roasted peanuts

Combine sugar, corn syrup and water and mix on medium heat until dissolved. Add butter. Heat to 305 degrees. Take off heat and add baking soda. Pour over peanuts on greased cookie sheet. Let cool. Break and serve.

English Toffee


I make this recipe every year around the holidays-it's scrumptious!

Ingredients:

1 pound butter
2 cups sugar
1 teaspoon salt
1 teaspoon vanilla
semi-sweet chocolate chips or dark chocolate (optional)

Melt butter and sugar in a pan. Cook to 300 degrees. Remove from heat and add salt and vanilla. Pour into a greased pan. Let cool slightly, then add chocolate. Allow to melt, then spread. Let cool completely. Break and serve.

Note: Next time try adding 1/2 tsp. salt instead of a full teaspoon.
