Gingersnaps

Dal and I went to the grocery store and Dal was eying the Gingersnaps. I'd been wanting to bake some cookies anyway, so I thought I'd try this recipe out. They're delicious! The recipe made quite a bit so I froze some of the dough and we love pulling it out and baking some when we want a sweet treat!

Ingredients:
  • 2 cups sugar
  • 2 eggs
  • 4 cups flour
  • 2 tablespoons ginger
  • 1 teaspoon salt
  • 1/4 cup shortening
  • 1 1/2 cups vegetable oil
  • 1/2 cup molasses
  • 4 teaspoons baking soda
  • 2 teaspoons cinnamon
In a mixing bowl, combine sugar and oil; mix well. Add eggs. Stir in molasses. Combine dry ingredients; gradually add to creamed mixture and mix well. Shape into 3/4 inch balls. Place 2 inches apart on ungreased baking sheets. Bake at 350 degrees for 8-10 minutes. Cool on wire racks.
